Spinach Tortilla, Olive Oil, and Za’atar: A Delightful Trinity of Green

05 Mar

One of the best treats I’ve had recently is the opportunity to have za’atar, which my friend Kelly graciously served at our mystical get-togethers at her lovely home.

Za’atar is a mix of sesame seeds and spices. To eat za’atar, once first dips a piece of bread into olive oil, and then one dips the bread into the spice mixture.

Za’atar is not difficult to prepare.

What you need:

  • marjoram
  • basil
  • oregano
  • sesame seeds
  • salt

Mix a little of these together, and there you have it.

The spinach tortillas were delicious with it. Kelly pointed out the sheer beauty of the three green colors next to each other, and what a sight it is!

The original mixture we tasted had been given by a friend of hers. That za’atar was much finer ground, so make sure to grind up your spices or mash them up or what have you.

You can also dip any kind of bread into the olive oil and spices. I particularly adore French bread

Nothing better than something else to add to the “Bread Dipping” list of ingredients. Sounds Delish!
