Gigi’s Squash PUFFS!

Yes, folks- this is a recipe that also includes squash but is different from the former one.

What you need:

  • 1 cup cooked squash
  • 1 egg
  • 1/3 cup ALL-PURPOSE flour
  • 1/3 cup cornmeal
  • 1 MEDIUM onion, grated
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

What you do:

  • Combine squash and egg
  • Mix cornmeal, flour, baking powder, and salt
  • Mix all ingredients together
  • Drop by level Tablespoons into hot oil

    I think I will try some by cutting them like french fried potatoes and frying them like that..What do you think? Also I am going to cook some sweet potatoes like that one day. They are so difficult to peel and cut into strips tho, it will probably take me a long time. Then you sprinkle them with powdered sugar… I just don’t know if they would be worth all the effort. But we will see….We used to try to entice Momma to eat and that was one of the foods that we took to her but we bought them at at barbeque restaurant in Fayette…

      Yeah, the Squash Fries definitely sound like a go- that would probably be easier to do than making the puffs.

      As for the sweet potatoes, you can always boil those for a few minutes to get the skin loosened- I boiled one last night, and it turned out great, with the small exception being that I didn’t boil it long enough. Either way, the skin was easy to pull back, so maybe that would save some of the trouble.

    I am not sure how to do that and then be able to slice into fries. Will give it a try, tho….

      That’s actually something I asked Gigi; she seemed to think baking them wouldn’t yield the same results, so it’s a risk you can take if you feel up to it!
